This Clean Eating recipe is sure to knock your socks off! My boys love it and my husband gets excited when he sees it on our menu for the week. It requires a lot of chopping but if you don't mind spending a little more time in the kitchen preparing it is well worth it. Here's the recipe:
Ingredients
- 3 chicken breast, cooked and chopped
- 1/3 C. light mayonnaise
- Lemon juice from 2-3 lemons
- 1 small apple, chopped
- 1/2 C. walnuts, chopped
- 1/2 red onion
- whole wheat pitas, halved
- romaine lettuce leaves
Instructions
In a small bowl, whisk mayonnaise and lemon juice together.
In a large bowl, combine chicken, apple, walnuts and onion. Pour mayo dressing over and mix together.
Stuff into lettuce lined pita halves.
