Blueberry Cottage Cheese Protein Pancakes


My boy helping me make protein pancakes.

I honestly have no idea where I got the recipe for these pancakes. All I know is that I've been making them for years and have made so many variations on the original recipe. I will post the original recipe but you can substitute the protein powder for any flavor or brand you like and the blueberries for strawberries. You can also swap the whole egg for egg whites only.

Ingredients

  • 1 c. oats milled to a flour consistency. [[This is where my Magic Bullet comes handy :)]]
  • 1 Scoop EAS 100% Whey Protein, Chocolate powder (or protein powder of your own)
  • 1 Egg (or 2 egg whites)
  • 1/2 c. 1% cottage cheese
  • 1/3 c. frozen blueberries, thawed
  • Almond milk (or other non-dairy milk) as needed to get batter consistency

Directions:

Place your oat flour, protein powder, egg and cottage cheese into a bowl and mix. The consistency should be like pancake batter with little lumps in it. If not, add some almond milk until desired consistency is achieved. Carefully stir in the blueberries.

Spray a pan with cooking spray and let it warm up a little. Begin pouring batter into pan as you would regular pancake batter. Cook until bottom is golden brown. Flip and cook the other side until it is golden brown.

Serve with sugar free syrup, agave nectar or maple syrup. 

This recipe should make 5 pancakes.

    Did you measure one cup of oats and then blend it into flour, or did you have 1 cup of oat flour?
