Yesterday, I took out chicken breast from the freezer to defrost. About mid-day I looked over to the defrosting chicken breast and thought, "Bleh! Another boring dinner of chicken, quinoa and vegetables." My brain rapidly started thinking of all the possible ways I could spice up the chicken breast a little bit. Then the huge light bulb above my head lit up! BBQ Chicken Pizza!!!!
So off to the store I went and bought all the necessary ingredients (minus the cilantro...I forgot.) If I had more time to plan the actual meal I would have made my own dough. Have you ever made fresh dough? It's amazing. I'll just have to save that post for another day. So without further ado, here is my recipe:
Ingredients:
- 2 chicken breasts, cooked and shredded - (I used my Foreman Grill for this!)
- 1 bottle Chris' & Pitt's - Hickory BBQ Sauce
- 1/3 red onion, sliced
- 4 c. Kraft - Mozzarella with a touch of Philadelphia shredded cheese (this cheese is sooo creamy!)
- 2 Boboli - whole wheat pizza crusts
- 1/4 c. cilantro, finely chopped -- I forgot this :(
Directions:
Begin by preheating the oven to 450 degrees. Spray two pizza
pans with non-stick spray and put the Boboli pizza crusts on the pans. In a
small bowl combine the shredded chicken breast with 1/3 cup of the BBQ sauce.
Mix the chicken so that it is thoroughly coated with the sauce.
Set the chicken aside and begin to form the pizzas by
coating each pizza crust with some BBQ sauce. You should put enough sauce on it
so that you can still see the crust through the sauce but make sure that there
are no "bald" spots on the crust. Next take the shredded cheese and
put it on the pizza crusts. You should have a slight mountain of cheese on each
crust :). Put the red onion slices on the cheese next and then spread out the
chicken evenly onto the crust.
Put each pizza into the oven and bake for 8 minutes. At the
8 minute mark put your cilantro on top and bake for another 2 minutes. Your
chicken should have "chard" look. This is how you know it is done!
