CE Southwest Meatballs

Upon my husband's request, tonight I made Clean Eating Southwest Meatballs. I made them last week and he's been wanting them ever since. These meatballs are even kid friendly!

Here is a picture of the finished product and the recipe:




Ingredients:
  • 1 lb. 93/7 ground turkey
  • 2 large egg whites
  • 1/2 c. whole-wheat bread crumbs
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 2 tbls. olive oil
  • 1 cup frozen yellow or white corn
  • 1 15oz. can of black beans
  • 2 c. diced tomatoes
  • 1/2 c. low sodium chicken broth
  • 1tbsp. fresh lemon juice
  • 1 tsp. ground cumin
  • 1/4 c. cilantro

Directions:

In a large bowl combine turkey, egg whites, bread crumbs, salt and pepper and mix well. Shape into 16 golf ball sized meatballs.

In a large skillet, heat the olive oil on medium-high. Add the meatballs and cook each side until golden brown. Add corn, beans, tomatoes, broth, lemon juice and cumin and mix well.

Reduce heat to a simmer and partially cover and cook for an additional 10 minutes until meatballs are cooked through. Stir in cilantro and serve.
